Sega rally is an excellent port on the saturn and id recommend it if you have to pick one.
Daytona is a bad port but it does play great.
If you choose daytona i prefer the original over the circuit edition.
While the latter looks nicer the handling is different and i find it much harder to drift and its not as fun.
Some games put branching narratives and player agency at the center of the experience, ensuring that every playthrough is different from the last (even if the core story remains the same).

If you're alright with no graphics, a developer called choice of games on the play store makes some fantastic text based choose your own adventure games.
Specifically one called choice of robots was my favourite.
